Easy Anzac Lactation Cookies

Ingredients:

110g (1 cup) rolled oats

150g (1 cup) plain flour

120g (⅔ cup) brown sugar

70g (⅔ cup) desiccated coconut

125g butter

2 tablespoons golden syrup

2 tablespoons water

½ teaspoon bicarbonate of soda

20g Lactabloom Shake Mix ( the MAGIC ingredient )


Instructions:

Preparation: Preheat your oven to 160 degrees Celsius (fan-forced). Grease and line three flat baking trays with baking paper.

Mix Dry Ingredients: In a bowl, combine rolled oats, flour, brown sugar, and coconut.

Melt Butter: Place butter, golden syrup, and 2 tablespoons cold water in a microwave-safe bowl. Heat for 3 minutes at 50% power or until melted. Stir through the bicarbonate of soda.


Combine: Pour the melted butter mixture over the oat mixture and stir to combine well.

Form Cookies: Roll level tablespoons of the mixture into balls. Place them on the trays, 5cm apart, and flatten slightly.

Bake: For chewy ANZACs, bake for 10 to 12 minutes or until light golden. For a crunchier texture, increase the baking time to 12-15 minutes.

Cool: Leave the cookies on the baking trays for 5 minutes before transferring them to a wire rack to cool completely.


Storage and Freezing Tips:

Storing: ANZAC Lactation Cookies can be stored at room temperature in an airtight container for several weeks. They will soften after a few days but remain delicious.

Freezing: Both cooked biscuits and uncooked dough can be frozen. Wrap dough in clingfilm and store in the freezer for up to 3 months. Thaw in the fridge overnight, and bake as normal, adding an extra minute or two in the oven if needed. Alternatively, freeze baked cookies in an airtight container for up to 1 month and thaw at room temperature.
